Everyone loves these. I was making almost 4 dozen a week at one point...
1 Cup Peanut Butter
1 Cup Sugar
1 Egg
Mix together ingredients.
Roll in to a ball, you can flatten with a fork if you want, but either way, they will come out flat.
Bake at 350 degrees for 10 to 15 minutes.

Coffee Cookies
Coffee Cookies
1 Cup White Sugar
1 Cup Brown Sugar
1 Cup Butter
2 Eggs
1 teaspoon Vanilla
3 Cups Flour
1 teaspoon Baking Soda
2-3 Cups Instant Coffee Granules
1 Cup Chocolate Chips/Bits
Nuts, if desired (I don't like any kind of nut so I've never used them)
Mix all together and bake at 350 degrees Fahrenheit for about 12 minutes.
So good and yummy!
